Happy New Year, everyone! Goodbye 2015, hello 2016! I have to say that I'm both sad and glad to see 2015 go. There was so much in 2015, both bad and good, and now nothing can change that. Now we can leave it all behind us and resolve to take on the new year. It's full of possibility, laying ahead of us ready to be painted with the colors we choose. A brand-new, pure-white, fresh start just waiting to see what we'll do...
In 2016, many people are resolving to throw out their bad habits, and bring in new ones with the new year. I, however, never quite understood the whole "New Year Resolution" thing. Observing other people made it seem that resolutions never change anything. They would set sky-high, idealistic goals, and then find them overwhelming. When they couldn't complete everything, they'd give up entirely. I know that's not the case for everyone, but admit it - that happens a lot. :P
One of the many disadvantages to being gluten-free or paleo is that burger buns usually consist of lettuce wraps. While I have nothing against lettuce wraps, they can get boring. And sometimes I just want a nice, juicy burger on some type of non-lettuce bun type thing. Not in a lettuce wrap. But there are a lot of dietary restrictions in my family – a few dairy free people, a sibling who can’t have oats, and a lot of issues with various grains.
Enter coconut flour flatbread. The idea behind this is simple; coconut flour held together and moistened with eggs and oil, flavored with salt and (optionally) honey, with baking powder to make it rise. Thankfully everybody in the family can have at least a little egg, or this would never work. But work it does, and it even holds up remarkably under the strain of my chronic Burger Over-Stuffing Syndrome (not actually a real medical condition). Behold:
